Arnad and Its DOP Lard: A Medieval Village That Smells of Rosemary

In a village with an almost-unknown Romanesque castle, they produce Arnad DOP lard, cured in wooden containers with alpine herbs according to a centuries-old recipe.

Arnad lies in the lower Aosta Valley, a handful of kilometers from the Verrès highway exit. Driving past on the motorway gives no idea of what it hides: a well-preserved medieval castle, a village in grey stone almost free of recent modifications, and the production of the region's most famous DOP lard. Lard d'Arnad received its DOP certification in 1996 and is one of the Aosta Valley's signature gastronomic products.

The Douit and Traditional Curing

Arnad lard is produced exclusively from the dorsal and cervical portion of the pig, cut into thick pieces and placed to cure in douits — characteristic containers of chestnut or oak wood. The brine includes salt, water, rosemary, bay, sage, cinnamon, and cloves, with minimal variations between producers. Minimum curing time is three months, but the best pieces remain in the douit for up to a year. The result is a white fat with pink veining, soft and intensely fragrant.

The Castle of Arnad and the Village

The Château d'Arnad, dating to the twelfth-thirteenth century, is one of the best-preserved castles in the lower valley. The structure is partly private but visible from outside, and the village that developed around its walls preserves stone houses with Gothic bifora windows and medieval portals. The parish church of Sant'Martino houses a sixteenth-century wooden crucifix and several ex-votos of extraordinary narrative intensity.

The Lard Fair and How to Get There

Every year, on the last Sunday of August, Arnad hosts the Fiera del Lard, a gastronomic and cultural event where producers display and sell their cured lards and demonstrate traditional techniques. The event draws a few hundred visitors but maintains an artisanal and authentic character. Arnad is reachable by car from the A5 motorway, Verrès exit, and by train from the Hône-Bard station. The best months are April through October.
