Favignana: the island of tuna and Egadi flavours

Favignana is the largest island in the Egadi archipelago, off Trapani, and is inseparably linked to the tradition of red tuna. The mattanza, the ancient net-based tuna hunt, is now history, but tuna remains the undisputed star of the Favignana table. Alongside it, the island's cooking reflects the western Sicilian tradition with Arab and maritime influences.

Local specialities you must try

Favignana red tuna comes in dozens of preparations: raw, grilled, in agrodolce, in ragu to dress pasta, and above all as tuna bottarga, grated over pasta or served in thin slices with oil. Lattume (the tuna's milt), fried or spread on crostini, is a connoisseur's rarity.

Trapanese fish couscous, with its rich, fragrant broth, is the other great dish of the territory. Busiate al pesto trapanese (tomato, almonds, basil and garlic) are the first course of the Sicilian summer. Caponata and panelle round things out.

Desserts

Sicilian cannoli with ricotta and fried cassatelle are the sweets to try. Almond or mulberry granita with brioche is the quintessential island breakfast.

Ristorante Camparia

In the former Florio tuna-processing plant. A historic, evocative setting and a menu entirely devoted to tuna in all its parts. A cultural as well as gastronomic experience.

Trattoria La Bettola

In the centre of town, homestyle Favignana cooking with the freshest fish. Grilled tuna and couscous are the strong suits. Generous portions and reasonable prices for the island.

Ristorante Azzurra

On the waterfront, with a sea-view terrace. Simply cooked catch of the day, good raw tuna and a Sicilian wine selection. Relaxed atmosphere.

Da Ferraro

A historic island trattoria and a reference for locals. Daily menu with the local catch, homemade pasta and traditional desserts. Excellent value for money.

Il Giardino delle Aloe

Hidden in a garden in the village, it offers creative fish cuisine with Sicilian roots. The crudi are refined, the fresh pastas are excellent and the setting is enchanting on summer evenings.

Street food and quick bites

In the centre of Favignana you will find bakeries with pane cunzato (bread dressed with tomato, anchovies, oil and oregano), arancine and panelle. Harbour kiosks serve panini with fresh tuna and sea lettuce. Granita is available in every bar on the island and costs 3-4 euros with brioche.

Wines

The Egadi wine tradition is linked to Trapani. Grillo, an indigenous grape, produces dry whites perfect with fish. Nero d'Avola is the red to pair with grilled tuna. Passito di Pantelleria, from the sister island, is the ideal meditation wine for the end of the meal. Marsala, just a few kilometres on the mainland, completes the list.

Budget tips

  • Pane cunzato from a bakery costs 4-5 euros and counts as a full lunch.
  • Eat in the village centre rather than on the waterfront: prices are lower.
  • Buy tuna preserved in oil directly from local producers: superior quality at fair prices.
  • Granita with brioche for breakfast costs less than a pastry at the bar and keeps you going until lunch.
  • Visit in May-June or September: same flavours, fewer tourists and less crowded restaurants.
