Volterra's cuisine reflects the hilly, wooded landscape around it. Wild boar, hunted in the woods of the Val di Cecina, appears in stews, roasts and as a filling for fresh pasta; truffle, another local woodland product, enriches first courses and crostini. Ribollita, the bread and vegetable soup common across much of Tuscany, is a staple too, alongside pecorino cheeses made in the surrounding countryside.
